When it came to Europe in 1805, it was given this name. It was meant to remind people of the officials in the distant empire, whose robes looked as fine and noble as the tangerine tasted.

Who's up early this morning? It's the farmers, because the mandarin harvest is a matter of haste. As soon as the fruits are ripe, they must be picked, otherwise they'll spoil. Before that, however, the mandarins were allowed to soak up the sun for many weeks and produce sweet aromas.

Even after harvesting, things have to move quickly to ensure not a single ounce of flavor or nutrients is lost: peeling, washing, and dividing the tangerines into small segments. Then they're off to the freeze-drying process. Here, we remove the water from the fruits, locking vitamins and minerals deep into the slices.
