Creative nutrition with freeze-dried blackberries: Bring on autumn!

When the blackberries glisten dark purple on their thorny branches, summer is drawing to a close and nature already smells a little like autumn. It's time for something hearty to fortify and warm you up—but with a sweet note so that summer lingers a little longer.

Mix flour, salt, water, and a little olive oil to make a tarte flambée dough. Divide into portions and roll out; so far, nothing exciting. The highlight is the topping, which consists of a cup of crème fraîche, two tablespoons of ricotta, and a handful of freeze-dried blackberries. Spread generously over the tarte flambée, top with a few flakes of mozzarella, and bake! Bring on the fall.

To preserve our blackberries for as long as possible, we use a particularly gentle process: freeze-drying. Immediately after harvesting (and a thorough wash), the fruits are placed in a kind of cold chamber for a few seconds. There, it becomes so cold so quickly that the berries lose their water from the shock. Everything else—especially nutrients and flavors—is locked deep inside.

This means our fruit still tastes like it's been freshly picked, retains all the goodness that makes it so good for us, and has a shelf life of many, many weeks. To keep it that way, all you have to do is store it properly. Protect the blackberries from air, moisture, and direct sunlight. This is easy to do by storing the tin in the cupboard. Or, if you like decorative touches, transfer them to one of our attractive refill jars.
