Puff pastry corners with plum

Ingredient list:

This is what you need:

  • buah plum as topping as desired
  • 1 roll of puff pastry
  • 80 g sliced almonds
  • some milk (approx. 2 tbsp) for brushing
  • 150 g cream cheese (also vegan)
  • 3 tbsp vanilla soy yogurt
  • 3 tsp vanilla sugar
  • 1 tbsp buah plum and 1 tbsp buah blueberry

Preparation:

  1. Roll out the puff pastry and cut it into 12 triangles.
  2. Brush the triangles with a little milk and add the sliced almonds on top.
  3. Bake the corners at 180 °C (top/bottom heat) for 12-15 minutes or until the puff pastry is golden brown.
  4. Put 1 tablespoon of plum and blueberry into a blender and grind the fruit very finely.
  5. Mix the fruit powder with the cream cheese, yogurt and vanilla sugar.
  6. Once the puff pastry corners have completely cooled, decorate them with the cream and top them with the freeze-dried plum.
