As a turnip, yellow beetroot is one of the winter vegetables. It is harvested very late in the year, when most of us prefer to sit in the warmth of our homes. It takes up to two years for the vegetables to be ready for harvest, but once they have been harvested, they grow even faster.

After a bath, we cut the beetroot into thin slices. These then go into vacuum drying - and the following happens there: The physical properties of the beet change in a vacuum. Your water evaporates at low temperatures. We can make chips from vegetables without roasting them in fat.
