Apricot tartlets

This is what you need:

Ingredients for 8 pieces:
  • 200 g flour
  • 100 g (vegan) butter
  • 60 g sugar
  • 1 pinch of salt
  • 3 tbsp cold water
  • 8 pieces of buah apricots
  • 3 tbsp vanilla yogurt

Preparation:

1. Put all dry ingredients in a bowl and mix well.

2. Cut the cold butter into pieces and add it to the dry ingredients.

3. Knead the mixture.

4. Knead the dough thoroughly and then let it rest in the refrigerator for about 30 minutes.

5. Roll out the dough, cut out circles, and press them into greased tartlet pans. Prick the bottom of the dough several times with a fork.

6. Bake the tartlets in the oven at 175°C for about 15-20 minutes.

7. Let the tartlets cool, then fill them with the yogurt, place a whole apricot on top, and sprinkle some crumbled apricot pieces on top.
