Our mangoes were allowed to soak up tropical sunlight for months and fully exploit their sweet fruit aroma. Dried fruit has a longer shelf life than fresh fruit, that's immediately obvious to everyone. But how does drying actually work? Unfortunately, often enough with great heat (it's supposed to happen quickly) and with the use of sulfur. Neither is beneficial for the taste or the sensitive micronutrients - and is therefore completely taboo for us. We dry mangoes and coconuts slowly. With low heat and without preservatives. This takes a few days, but the fruits lose almost all of their water.
