First moderately: immediately after harvesting, the fruits are cooled to a core temperature of less than 5 °C. This prevents the delicate, perfectly ripe kiwis from being damaged or getting pressure marks. Only then do they proceed to freeze-drying – and that's when it gets really cold:

At temperatures of up to -80° Celsius, the golden kiwis lose their water, while almost all nutrients remain safely locked in the fruit. The double cooling not only gives the kiwis an extremely long shelf life, but also makes them extra crispy. For storage at home, we recommend our refill jars: airtight, dry, and transparent.
