Behind this big word there is no chemical catastrophe, but rather a very gentle preservation process. Immediately after picking, our sour cherries are shock-frozen and then placed in a vacuum. There they then lose a large part of their water - and almost nothing else.

Important nutrients are almost completely preserved, along with the taste of freshly harvested cherries.
